Pasta with Sweet Potatoes


1 large sweet potato, peeled cut into cubes
1/2 teaspoon each of sugar, chili powder and cinnamon
2 Tablespoons olive oil
8 oz of rigatoni (any pasta you like will work)
1/3 cup peanut butter
3 oz cream cheese, cut into cubes
2 teaspoons Sriracha (or any chili sauce you like)
1 Tablespoon soy sauce
6 green onions, thinly sliced

  • Preheat oven to 450. Spray baking pan with baking spray to prevent sticking, set aside. Place sweet potatoes in bowl, toss with 1 tablespoon olive oil, the sugar, chili powder and cinnamon. Spread in prepared pan.  Bake about 20 minutes or until potatoes are tender.
  • Cook pasta, reserving 1 cup of the pasta water.
  • In saucepan, combine peanut butter, cream cheese, chili sauce and soy sauce, whisk in 1/4 cup of hot pasta water.  Stir over medium heat until heated through.  If sauce is too thick, stir in additional water.  Stir in most of the green onions.
  • Serve sauce over pasta and sweet pottatoes and remaining green onion.
** I like to double the sauce so that there is extra.  I also like to double the Sriracha- cause I'm a spicey girl!
