Starting With Simplicity

I love food.  I'm a girl and I actually love to eat.  I have the body to prove it!  Food makes me happy.  It's not so much the food itself.  It's the process.  Peeling, chopping, standing over the stove stirring, the smell of things baking in the oven and then watching the faces of people who are eating what I made.  It could be a pb & j or an eight course meal... I love the feedback from people.

About a week ago I ordered a produce basket from Bountiful Baskets.  I got a ton of produce and have been contemplating what to do with all of it.  I decided that I wanted to keep it simple.  The only thing that I needed to buy from the grocery store to complete my dinner was corn tortillas to make my own chips.  I spent a whole $1.72. 


Tomato and Mango Salsa
  • Tomato
  • Mango
  • Tomatillo
  • Cilantro
  • Jalepeno (I used canned so I would have some of the juice)
  • Onion
  • Lime juice
Mix all ingredients as you like... You can never mess up ratio's when it comes to salsa!

Corn Tortilla Chips
  • Corn Tortilla's
  • Baking Spray
  • Pepper
  • Chili Powder
I use corn tortilla's because I prefer the flavor.  Plus, they are healthier!  There is no going wrong with spices, you can use whatever flavors you like.  I'm a spice girl so I chose pepper and chili powder.

Preheat oven to 325 degrees.  Cut tortilla's into wedges or strips, whatever you prefer.  Spread tortilla's on ungreased baking sheet.  Spray with baking spray.  Sprinkle with pepper and chili powder. Bake 5-10 minutes.  Watch them... THEY CAN BURN QUICKLY! 

AND THEN....  After all that spice, I wanted something sweet so I did this...


A simple fruit salad....

  • Cantalope
  • Mango
  • Tangelo's
  • Strawberries
  • Bananna
I put a little lime juice in the mix to prevent browning... and as we all know, it adds flavor.

That was my dinner.  Simple and easy.  Oh and delicious!

  1. PSH. I don't see you getting fat on this kind of food. This is healthy, SCRUMPTIOUS food! Maybe implement a challenge where you make it as healthy as possible or as natural as possible? Maybe that could inspire you to get super duper creative! (Not that you aren't already). Love you Lady!
